Burgers that every Kid will love! And a vegan one for the teenager in the corner…

The Bank holiday weekend is just around the corner and with a predicted heatwave, why not crack open the grill!

We have two brilliant recipes that every child will love, and a vegan one to ensure that everyone in the family has a great time at any summer BBQ you want to hold!

Beef Burgers

A good burger recipe can do you proud for years! You are the king of the BBQ and this is what these burgers will do for you!

Makes 6 burgers

  • 500g Minced beef – look for one with a high-fat content as that will help keep it together
  • 150g Breadcrumbs
  • 70g Cheddar, grated
  • 2tbsp Worcestershire sauce
  • 1 small bunch of Parsley, finely chopped (put the leaves into a cup and chop with scissors for ease and the least amount of mess!)
  • 1 Egg, beaten
  • 1 tsp Salt
  • 1/2 tsp Pepper

To serve

  • Burger buns
  • Sliced tomatoes
  • Bacon
  • Lettuce
  • Sliced onions
  • Tomato ketchup
  • Chips
  • Whatever you want on a burger

Method

Gently break the mince up in a large bowl, then add the cheese, breadcrumbs, Worcestershire sauce, parsley and eggs and salt and pepper. Mix thoroughly with your hands, combining everything together.

Shape into six burgers, and chill for 24 hours or until you are ready to cook.

If you cook them before they have had a chance to chill they won’t hold their shape as well, but they will still taste amazing.

To cook the burgers, heat your grill to a high temperature. Cook for 6-8 minutes on each side.


While this is happening, heat your burger buns so they are nice and toasted. Then let everyone assemble their own burgers, and listen to the happy chomping around you!

Vegan burger…

Vegan burgers are where portobello mushrooms shine! They are the meaty heart of most veggie alternatives. They don’t freeze that well, so try to use them up quickly. This is basically a marinaded mushroom, but your vegan teenager will appreciate the effort!

Makes 4

  • 4 portobello mushrooms
  • 60ml balsamic vinegar
  • 2 tbsp olive oil
  • 2 tsp mixed herbs
  • 1 tbsp minced garlic
  • Salt and pepper to taste
  • Vegan cheese – they make slices of coconut cheese which is somewhat similar to burger cheese…

Method

Remove the stem of the mushroom, and place the caps into a shallow bowl. Whisk together the vinegar, oil, herbs, garlic and salt and pepper. Pour this over the mushrooms and leave to marinade for 10-15 minutes. Remember to turn so that they have all over flavour.


To cook, fire up your grill to medium to high heat. Brush it with oil, and place the mushrooms on top, saving the marinade to baste them with. Grill for 5 to 8 minutes on each side. Top with the vegan cheese during the last 2 minutes of grilling. Serve to your very happy vegan child or the single vegetarian at a summer BBQ!
